Healthy Eating in January

New year, new beginnings and new resolutions! 2019 is finally here and we couldn’t be more excited! We’re half way through January, and since the end of the Christmas period, we have been hearing from our guests that they really want to improve their eating habits and try eating healthier this year. Therefore, we decided to dedicate our blog this month, to some healthy Greek recipes that will satisfy your taste buds as well as your new year’s resolution.

Greek Salad
It’s refreshing, healthy and incredibly easy to make. All you need is:

- 4 vine tomatoes
- 1 cucumber (peeled)
- ½ onion
- Kalamata olives
- Feta cheese (approx. 80gr)
- 4 tablespoons extra virgin olive oil
- dried oregano
- balsamic vinegar
- salt to taste

Chop the tomatoes, cucumber and onion and mix in a bowl with the olives, olive oil, vinegar and salt. Add feta cheese and oregano and enjoy!

Fava
A light, easy to make dish, guaranteed to keep you energised for the day.

- 500g yellow split peas
- 3 red onions, roughly chopped
- 2 cloves of garlic, chopped
- 1 lt warm water
- juice of 2 lemons
- 1/3 cup olive oil
- salt and pepper to taste

Rinse the peas and sauté the onions. Once the onions caramelise, add the split peas, olive oil and warm water and bring the heat down to medium. Once peas boil and become mushy, add lemon juice and mix in the blender. Serve with some chopped onions and olive oil.

Boiled Amaranth Greens
Greens and veggies from the mountains drizzled in olive oil, perfect for lunch or dinner.

- 1 bunch of Amaranth greens
- 2 cups water
- salt to taste
- extra virgin Greek olive oil to drizzle
- lemon juice to drizzle

Rinse your amaranth greens well, and add hot water to a pot. Once the water boils, add the greens and boil until fork tender. Remove from the pot and leave them to drain. Drizzle olive oil and salt. Chop some Santorini tomatoes on the side and serve warm.
